The Sweet and Savory Life

Why it is important, for you as a savory cook to have basic knowledge of pastry.




Pastry techniques are about timing and chemical reactions. A major component in baking and in pastry making is patience. A process to ensure right textures, temperatures, flavors, colors, and most importantly getting the final results you seek.


For instance, pizza is part of Italian cuisine but did you also know that you make pizza dough in the processes of pastry making?




In savory cooking, different breads are used in several ways and must have a knowledge of which breads pair well with what dishes, respectively.


Pot pies are a great example of savory cooking meeting pastry.




Basic pastry knowledge will open doors and offer opportunities to work not only as a savory cook but also in the pastry realm. It has ignited my creative side and I have learned a lot about pairing a variety of delicious desserts with my main course menu offerings.
